Perched on a hill of 17 hectares sits a stone farmhouse dating back to 1700, surrounded by olive groves, pastures and woodland with classic views of our beautiful Tuscany.  We have a flock of 150 sheep and 40 lambs which live in an old stable a little further out into the country. This is a childhood dream come true, says Stefano, "building my own farm".  The old stable has been renovated, I have maintained the pre-existing structure whilst working with new solutions to better accommodate our flock.

Respecting the environment has always been a priority. I have built a 20 Kw photovoltaic system perfectly exposed on the south side of the barn, a wastewater treatment plant using organic processes and heating powered by the waste of the farm and olive groves.

Combining modern and traditional methods of milk production we like to operate in the most natural way possible by allowing the lambs to suckle until weaned. 

The old barn has been transformed into a small but efficient, technologically equipped oil mill to produce my organic olive oil from both whole and pitted olives.

The main building has been renovated whilst also maintaining its original character. I designed and built the dairy on the ground floor where we produce ricotta, yogurt, young and matured cheeses. The maturation process takes place in a stone cave dating back to the restoration. I’ve called the dairy "Du’ Passi ", a way of saying that something is really close in Tuscan … I have also renovated my own home above the dairy.

"La Dispensa" - our farm shop next to the dairy - sells all our produce as well as having a professional kitchen and wood-burning oven.  Taste Tuscan specialities such as cured meats, cheeses and stuffed focaccia where special attention is given to the ingredients used.  I personally select local suppliers with seasonal produce.
