In the middle of Frilui, in Colli Orientali discover Asperum, balsamic vinegar produced by Midolini, made from the grapes of Refosco and Friulano in the traditional way, giving life to these magical drops.

In 1998 Midolini Acetaia (vinegar factory) made its way into the Guiness Book of Records as the biggest balsamic vinegar acetaia in the world.
Every aspect of the production process is a craft, using selected grapes which are then cooked for 60 hours. This is how the must is obtained which as it matures becomes a balsamic vinegar par excellence, aged in barrels made of seven different precious woods.
The barrels are protected by pieces of linen cloth that allow the must to breathe as it matures, cloth cut by the women of the family.
Balsamic vinegar is not only high in quality but is also very good for you. It is rich in antioxidants and mineral salts and low in acidity so that it is ideal for protecting you against free radicals, aiding in the aging process and it helps promote a healthy digestive system!
